How exactly does the two fluids exchange heat without fixing with each other?

Let's take a look.

(Plate&Frame Heat Exchanger During Operation)

Hot fluid flows into its connection, and onto the surface of various plates, say the 3rd plate, 5th plate, 7th plate, ..., and eventually it has nowhere to continue but flow back, coming out of the outlet connection;

Meanwhile, what happen to our cold fluid?

We see it into another connection, again but differently, it enter the surface of the 2nd plate, 4th plate, ..., finally it is heated and out of the exchanger.

Now if look closely, we find it is the gasket that is doing all the trick, separating the two fluids by using different gasket models.
